Kembūka (केम्बूक) is a Sanskrit word referring to Ipomoea aquatica (water spinach), from the Convolvulaceae family. Certain plant parts of Kembūka are eaten as a vegetable (śāka), according to Caraka in his Carakasaṃhitā sūtrasthāna (chapter 27), a classical Ayurvedic work. The plant is therefore part of the Śākavarga group of medicinal plants, referring to the “group of vegetables/pot-herbs”. The plant grows in water or on moist soil. Its stems are 2–3 metres or more long. The flowers are trumpet-shaped and 3–5 cm in diameter, usually white in colour.
